According to the College of Agriculture & Natural Resources, broccoli microgreens contain four to 40 times more nutrients than their mature counterparts. I, personally, have a tough time getting myself to eat veggies, so this is splendid news. Your body will thank you for all those antioxidants. The University of California Press concluded growing microgreens on compost, without fertilizer, takes 220-328 times LESS WATER than industrially produced broccoli in the Central Valley.
